how come that the dictionaries can't coexist??? what is the purpose to
have a script to change the default dictionary if i can have only one
installed at one moment????

ispell has one default language configured that it uses when you don't give it the "-d" switch. This is the one that is asked when you install a new language. Or does it really uninstall other languages when you install a new one? This would mean there is a bug in the packaging in unstable.
