I tend to have Gnome installed, though, even if I don't always use it. The controls you are looking for are possibly part of a gnome package. I don't have it on my system right now... Try typing in a terminal:
gnome- and hit the tab key twice. You should get a list of commands for various gnome utilities. Maybe one of them will stand out. There are also some pulseaudio utilities you may want to install and see if they are what you're looking for. Use that in conjunction with xmodmap to map your keys to certain functions. Volume can be adjusted using the amixer command.
