You don't. You download the .iso and burn it to CD or DVD. You need to burn the image to CD or DVD, not copy the files. ($CD burner should have a menu entry for this.) > and what -which files would I use of the 8 dvds? Personally, I would say none of them. I would download the netinstall CD and do a net install. That way you have an already updated system and download only the packages that you actually want. But if you do want to use the DVDs, then you only need the first one if you have internet access.
