Exim uses it to set the default return address for your Linux account.
I use the mutt email reader. Normally it uses the return address that I specify. But if it doesn't get set for some reason (experimental mbox-hooks in .muttrc) then it uses the default. You can get a lot of info by bcc:ing yourself on a message and reviewing the headers.
