i386

[my-desktop:~]$

I assume, after a quick search of man dpkg, that I should probably add the
correct architecture? Or is this telling us that I installed from the i386
netinst iso (which I did), and that I need to re-install from the amd64?



AFAIK you have to reinstall with http://cdimage.debian.org/cdimage/wheezy_di_beta4/amd64/iso-cd/debian-wheezy-DI-b4-amd64-netinst.iso

Because adding a foreign architecture is only for adding its libraries to run some applications, not for running its kernel.
