I found a simple workaround which lets me keep grub, I have no other OS'es installed that would require a mount and scan of all partitions:

tail /etc/default/grub -n 3

#prevent hanging on mount scans
GRUB_DISABLE_OS_PROBER=true

solves the issue for me.
