With compose, they tend to be somewhat mnemonic, so you can remember them once you've seen them once. E.g. '<' + '3' => '♥' and '.' + ')' => '☺'. You get the idea. I haven't yet seen a complete table (nor have I yet bothered to find out how one configures that in X -- some day I'll do).
