pulseaudio:amd64 (15.0+dfsg1-4+b1, 16.1+dfsg1-2) pulseaudio-utils:amd64 (15.0+dfsg1-4+b1, 16.1+dfsg1-2) libkf5pulseaudioqt3:amd64 (1.3-2, 1.3-2+b1) pulseaudio-module-jack:amd64 (15.0+dfsg1-4+b1, 16.1+dfsg1-2) were part of the update that broke pulseaudio, so I think I'll use reportbug to report this issue.
