If you leave "Debian Desktop" selected, the installer chooses a Desktop Environment for you. And guess which one it chooses by default? That's right: GNOME. Assuming you're using a standard installer image, and not one that has a DE in its name. I have no idea why this confusing default auto-selection exists, but it does.
