You might get more complete answers by looking on the web at such pages as https://wiki.gnupg.org/EMailClients I use claws-mail and don't use encryption, so I had no idea what its behaviour was, but looking at that page I see it has options for all the things you ask about. I expect the page may contain similar information about other MUAs.
