My log file shows the test nHELOBOGUS with a weight of 2, but nHELOBOGUS doesn't appear in either the global or junkmail files.

The "n" means "negative". You have the HELOBOGUS test set to have a negative weight of 2, so that E-mail that does *not* fail the HELOBOGUS test has a weight of 2 added to it.
