Markus, I believe that the XINHEADER and XOUTHEADER directives in the
global.cfg are what you're looking for.

They can be used to create an arbitrary header and populate it with any
exposed Declude variables, e.g.:

#XINHEADER      X-Note: This E-mail was sent from %REVDNS%
([%REMOTEIP%]).
#XOUTHEADER     Organization: Your Name Here
