[DUG]: Monitoring Network Traffic to and from specific adapter

A client wants to have the ability to monitor Network traffic on a particular adapter. They are running virtual offices, and have clients connecting to a PC set up as a router. They want to log network traffic to and from the router pc, so they can charge the client what they used.   How would I go about this? --- Outgoing mail is certified Virus Free.
