On my MacBookPro, I check for denyhosts instances with:
$ ps -A | grep deny
   135 ??         0:13.21 /sw/bin/python2.5 /sw/bin/denyhosts-py25.py 
--daemon -c /sw/etc/denyhosts-py25/denyhosts.cfg
  5573 ttys000    0:00.00 grep deny

(I use the denyhosts from finkproject.org.)

Also, my log file is at /sw/var/log/denyhosts-py25 (which can be found 
with $ locate denyhosts). (I'm suggesting that your log file may also be 
in a place you're not expecting and that's why you don't see it.)
