I found the issue:
The default string provided for mp3 binds the output of lame to id3demux (that 
would try to remove ID3 tag) instead of id3v2mux (that will add them).

Once corrected (and I reloaded sound-juicer) it appeared in the list !!!

Hint: Running sound-juicer with gst-debug-option ("sound-juicer --gst-
debug-level=2"), you can see such errors during the initialization of
the application.
