This is 100% reproducible and has been present since I started using Ubuntu in Breezy.
To reproduce it: configure an Evolution account, and set the name (Edit->Preferences->Mail Accounts->...select the account...->Edit->Full name: J. Pablo Fernández, attached screenshot), send an email with that account, look at the sent email in your sent folder or on the destination. I'm using Ubuntu 8.10.
