I sort of accidentally stumbled on this feature because of my touchpad.
I'll detail Step 2 if it will help.

Step II broken down:

1. Click on an image in the part of the Evince window displaying the PDF.
2. Drag the image a little bit (a few pixels is sufficient)
3. Drop it on the same part of the Evince window displaying the PDF.
4. Ta-dah! It displays in a new Evince window.

I'm perfectly satisfied to use the Right-Click -> Save Image As...
feature but the thing is that sometimes it's iffy because there's text
embedded in the PDF and that gets selected and I don't get the right
context menu. If, however, I do the drag thing I can instantly tell
what's happening (either I'm getting the image, or text is getting
selected).
