It is just simply not translated yet. According to http://l10n.gnome.org/languages/it/gnome-2-32/doc/ panel clock's manual is translated only 66%, and those strings on the screenshot show up in the po file as untranslated.
I don't think there is much we can do, but perhaps you can help the Italian Gnome translation team translate it.
