The are two issues here, te second one is duplicate of bug 682492 so I
suggest to continue it there.

The first issue I can confirm it also in a i386 computer.

  Evince does not remember my settings. There are two issues here:
  
  1. My settings should be saved automatically. Currently I have to select
  Edit -> Save current settings as default to save my settings. This is
  ridiculous. When I select a particular setting, DO NOT SET IT BACK. When
  I setup a program a particular way, I do that because I WANT IT THAT
  WAY.

NOT SAVED. Specifically:
