I only use Empathy for XMPP/Jabber, and have the problem too.  It's not
just an IRC problem.  Description updated.

Also of note: Disabling the contact list doesn't work for me.

- When I type text in an IRC chat window, the text ~does not~ wrap, instead the 
window grows.
