Thanks, it seems similar to
https://gitlab.gnome.org/GNOME/evolution/-/issues/1835 which has been
fixed in git and will be provided as a stable update when the next
release is out

One workaround was also suggested

> try to set Edit->Preferences->Mail Preferences->HTML Messages->Unset
colors provided in HTML mails in message preview
