Jean: There is some control in the following preferences dialogs, though perhaps not as much control as you are looking for.
- System->Preferences->Appearance - System->Preferences->Windows - System->Preferences->Main Menu If there are specific features that you think would be good to add to GNOME, I would recommend filing a bug in the gnome-control-center category: http://bugzilla.gnome.org/ I've never seen the new network and trash icons appearing in different places between boot, though.
