Hi Hillel,
Even I don't see the change background colour button as mentioned in the 
Help.
To change the background colour, you should click on the icon beside the 
label displaying CPUn, Memory, Swap, Receiving or Sending as the case 
may be. This pops up a color chooser dialog.
