My compose key has always been the right Alt key (when I use
iiim-properties to switch to English/European). For me, this continues
to be true, even in build 130, even on a laptop with a clean install. So
what happened for you, I dunno...

That said, if I want to make some other key (say, my left Windows key)
my compose key even when I'm not switched to English/European, I can get
its keycode via xev (looks like it's 115) and then use xmodmap: 

$ xmodmap -e "keycode 115 = Multi_key"

Voil?! :-)

(I could've sworn one could do this via a GNOME dialog at some point in
the past....)
