> 1. Are any of those settings ones that you would often want to change
*while* typing? (If so, maybe they should be in the indicator menu, not
just in System Settings.)

Except for the Simplified/Traditional switch under limited
circumstances, there should be no need to change any of these settings
while typing.

> 2. Why is the default number of candidates 5?

Interesting question, but this is for the maintainers of the pinyin
package to figure out.

It probably has to do with the maximum acceptable size of the candidate
list when it's laid out horizontally. Sometimes you might have
candidates with 2 or more characters, other times you have only 1. If
you have a fixed number of candidates, sometimes 5 is too few, and
sometimes 5 is just right (most of the time it's too few). Windows
handles this by clipping the candidate list to a fixed width (so the
number of candidates shown is variable).

Title:
"Text Entry Settings" should provide option to manipulate input method
  settings

Status in “gnome-control-center” package in Ubuntu:
  Confirmed

Bug description:
Create a button on the "Text Entry Settings" interface to launch
preferences dialog box for input methods.

e.g. For ibus-pinyin, the button would launch /usr/lib/ibus/ibus-
  setup-pinyin.

Why is this an issue? Because there are many settings that may be
relevant to users in the setup dialog, e.g. Simplified/Traditional
Chinese input, Half/Full width punctuation, Horizontal/Vertical
candidate list, Number of candidates in candidate list (the default of
  5 is probably not enough).
