you that's not an Ubuntu problem, the depends is there for a reason, of
course if you rebuild it to remove it then you create the problem, but
it comes from your version not the archive one.  Ubuntu is not writting
this code, if you feel like upstream shouldn't request colord you should
report it to them on https://gitlab.gnome.org/GNOME/gnome-control-
center/issues

  the gnome-control-center should not fail/abort without colord, but
  just show up a message like it does when network-manager is not
  installed for wifi settings:
