Gnome-settings does not display the front panel / headset as an output
device, only the displayport audio outputs are shown. See the attached
screenshot.

ubuntu-bug does however play stereo sound out of the headset during the
test procedure. I'm not sure this is a bug in alsa unless it's related
to an autodetect or configuration issue.

This is on a intel 10th gen NUC,
