Weirdly, you can't disable the extension within the 'Tweaks' 'extensions' option, but if you install the gnome-shell-extension-prefs application (see https://www.starryhope.com/notes/hide-desktop-icons-on-ubuntu-20.04/ for details) then you get an 'Extensions' application where you can disable the three built-in extensions. Installing this enables Desktop Icons to be correctly disabled, and you can then, if feeling like it, try out the fork which behaves much more like the older Nautilus controlled desktop - https://gitlab.com/rastersoft/desktop-icons-ng
