So I haven't been able to reproduce this issue with the media keys normally. What it actually correlates with is my bluetooth headset pairing with my laptop; I thought it might have been the media keys because whenever I pair the headset it spontaneously emits a media key event (which is probably a bug in the bluetooth stack somewhere), but when pressing any of the media keys, either on my laptop keyboard or on my headset, evince doesn't crash.
But I had a hunch that it might be related to the registration of a new input device. Disconnected my USB keyboard and reconnected it, and evince crashed again.
