In the Java DSL, you can say from("foo").marshal().jaxb().to("bar")

In XML I think it would look like this:

<from uri="..." />
<marshal>
  <jaxb />
</marshal>
<to uri="..." />

The problem is that you can't use the <jaxb /> element without the contextPath 
attribute, which the XSD says is required.
