Hi Dave, Marvelous, found everything I was looking for.
The application icon is in the Mac OS X native .icns format and located at http://argouml.tigris.org/svn/argoumlinstaller/trunk/appbund/infra/GenericJavaApp.icns and in the info.plist file it's referenced via the "Icon file" key.
