LogKitLoggerStore now supports both Excalibur and Simple configurations 
(corresponding to version 1.1 and 1.0 in the logs element in environment.xml) via 
different LoggerStoreFactory implementations.
These pass in the appropriate o.a.a.e.logger.LoggerManager implementation in the 
constructor of the LogKitLoggerStore.

The files should then reflect - for consistency with the other loggers -
the fact that logkit the underlying logging implementation; eg
SAR-INF/logkit-excalibur.xml
SAR-INF/logkit-simple.xml

Description:
It has been suggested that we should extract logging definition from environment.xml 
and place it in a new file 
 
SAR-INF/log.xml 
 
This has been suggested because it mimics behaviour in other containers and logging 
can not really be considered to be part of the "environment" of an application.
