I agree that, since the File and FTP component has been totally rewritten in Camel 2.0, the documentation can be a bit confused. I have therefore created a File2 and FTP2 page for the Camel 2.0. If you want documentation of eg a specific release then you can check the manual. Its html/pdf copy of the wiki documentation when the release was generated.
