Camel 2.1.0 release process under way

Hi,

I started the release process for camel 2.1.0 a few hours back after  
dealing with a few minor wrinkles such as checkstyle. I doubt I'll be  
finishing tonight because it's getting late, so I would appreciate if  
you could not make major commits until I finish this (you will see the  
[vote] message). I  hope I won't have to redo it, but... one never  
knows :).
