Looks like I was running an old version I picked up via WebStart from 
goodness-knows-where (possibly http://cmis.alfresco.com/).  I just downloaded 
the last nightly build (Version: 0.5.0-SNAPSHOT / Build: 20110803-2227) which 
does indeed render text in a copyable way.

Perhaps it would make sense to create a WebStart link from 
http://incubator.apache.org/chemistry/cmis-workbench.html and possibly also 
http://incubator.apache.org/chemistry/opencmis.html so that there is one, 
definitive source for obtaining the workbench via WebStart?
