I've no file roller available at the moment, but cannot see a problem to unpack them in a terminal. Have you tried it on the command line, too?

Another thing you should do is to verify that your download is not broken. Use this file to get the MD5 checksums:

d3bc1cc77b91548029ff5184ccdd71b3 OOo_3.3.0rc10_20110118_Linux_x86_install-deb_en-GB.tar.gz f28f575c3c3af91c779ac3dfea8316ed OOo_3.3.0rc10_20110118_Linux_x86_install-deb_en-US.tar.gz

(Source: http://download.openoffice.org/md5sums/3.3.0_md5sums.txt)

On Linux the md5sum command should be installed by default already, so a:

md5sum OOo_3.3.0_Linux_x86_install-deb_en-{GB,US}.tar.gz

should show the same hash values.

As alternative you can try to download the files from another mirror:
http://distribution.openoffice.org/mirrors#mirrors
