Setting options like [this
one|https://nightlies.apache.org/flink/flink-docs-release-1.20/docs/deployment/config/#state-backend-rocksdb-writebuffer-count]
in the configuration of a cluster that will run a state processor job
recognizes the properties but it seems they aren't actually applied, checking
the RocksDB logs shows that the default are used in every case.
