Summary: Default value for replication.sink.client.ops.timeout
should align more closely to default rpc timeout

Current default for replication.sink.client.ops.timeout is 10 seconds, while
the default for rpc timeout is 60 seconds.
It makes sense to set the default much closer to rpc timeout (45 seconds).
