TLDR:
hive.serdes.using.metastore.for.schema includes only a sub-set of serdes which
store schema in metastore. We should expand this list (and eventually remove it
if possible) to all the serdes defined in the Hive source code since a
standalone-metastore we cannot have dependency with serdes as discussed in
HIVE-17580.
