FYI, we uncovered an issue in 1.11.0 which appears related to 
https://github.com/apache/iceberg/pull/15150. Sort order specs are now 
serialized in SerializedTable. During deserialization, the sort order specs are 
bound to the current schema. If an old sort order spec refers to a field that 
had been dropped, the sort order validation fails.

I thought I'd raise awareness about this until there's a fix.
