+1 I think this will bring better experience to new users of 'kogito-examples' because the 'main' is the default branch in all other Apache KIE repositories.

The current default branch, stable, will be deprecated and deleted. *Details* This proposal is coming the work on missing examples for 10.0.0 issue[1]. We have merged the update[2] of versioning and references to 10.0.0 on 10.0.x branch. Now, we are missing 2 steps: 1. Synchronize README.md file on main branch to give the proper information about branches. Solved by [3] 2.
