The GatewayTestDriver has some code to manually find the service definitions
and copy them:

source resources for 'stacks' to be tested
This is also re-used a few times in the gateway-test module. A much better
approach is to use the maven-dependency-plugin to copy the services into the
target directory, and then point the gatewayServicesDir to this. This means the
copying only takes place once, and is independent of the file-system layout.
