Well if you are upgrading as in total new install of J2EE CF then yes, go for it, but CF5 to MX 7 may be more of a curve... certainly be prepared for slower performance to begin (as you find code you need to MX-ify) and get ready to tweak the JVM pronto.

I gather  you will be upgrading a test box first?
