the host header shouldn't be an unassigned IP address, it should be the IP address specified for that FQDN in the DNS. the unassigned IP address is what's used for the 'default' site. i.e. all ip addresses point to this site, apart from specific host headers set up for the other sites. i think.

It has been running just one website (mydomain.com) , but now I want to add another. I created a new site, unassigned IP address, host header of test.mydomain.com added a host entry of test.mydomain.com which point to the box ip address If I stick test.mydomain.com in IE on the server it still gives me the default website. What am I missing?
