+1 on schemaless mode being pitched specifically as 
development/fast-prototyping time. The last couple of prototypes I did, I 
started from universal dynamic field enabled and then added fields one-by-one 
as I knew what to do with them. Schemaless would give me the same except it 
would also be a bit smarter about int fields, etc.

Also, while ElasticSearch website talks mostly about schemaless mode, all the 
"going to production" third-party guides I have seen stress quite strongly that 
locked-down schema should be used for real production.

This could also be reinforced by adding a tutorial that starts from schemaless 
and then - explicitly - talks about moving to explicit schema. And, of course, 
the comments in the config file, as appropriate.
