+1 This is really needed!
I think in general that processors should match nothing by default. Could lead 
to unexpected behaviour for users in the long run. If a user wants that a 
processor is applied to all compatible fields he / she can configure: 
{code:xml}<str name="fieldRegex">.*</str>{code} 

Or alternatively we can introduce a match all field like this: 
{code:xml}<str name="fieldName">*</str>{code} 
To make it somewhat easier for end users.
