I created a new test case that uses maven.jar.overrides, and it worked:
[EMAIL PROTECTED] test06]$ unzip -t target/test-maven-ear-plugin-06-.ear
Archive: target/test-maven-ear-plugin-06-.ear
testing: META-INF/ OK
testing: META-INF/MANIFEST.MF OK
testing: fakeSar-1.0.sar OK
No errors detected in compressed data of target/test-maven-ear-plugin-06-.ear.
The testcase is on CVS, so I'm marking this bug as closed.

Description:
The ability to bundle a .sar file in an ear file.
MPEAR-3 fix added sar as a connector, but ommitted to add it to the artifact
types that are bundled in an ear, thus it is ignored at bundling time.
