Also, with regards to the chipsets, is that just a situation where Moblin's
kernel doesn't have the drivers for those enabled? Could a motivated
tinkerer just rebuild the kernel to add support (understanding that userland
support might still be missing)?
Nope, you'd need to recompile the entire distribution so that the
binaries don't require the SSE3 CPU feature.
C2D has the right support though.
