I've got a requirement to have a Maven plugin that finds the latest
version of the current project, increments its incrementalVersion, and
then commits this change to the POM.xml file.
The release plugin during the release process will exactly do what you
described...furthermore it's possible to change the version of a maven
project via the versions-maven-project..only the last step must be done
manually which could be overtaken by a CI solution like Jenkins or use a
simple script for such purposes...
