Documenting these things, and things such as local desktop files on Linux (eg. https://lists.apache.org/thread/2bh3zs0cddgt1ttft6vgjpdg4o8jndjk ) or providing simple scripts to work with the zips are the right way to handle this in my opinion. There's a world of difference between what people can and should be able to flexibly configure on their own machines, vs getting an installer past Apple's notarization process.
